Healthy cupcakes? You betcha!

As you can see from my most all of my posts, I love baking, fattening, gooey, sugary treats.  I should need to learn savory items  and healthy items.  I am called out frequently by Donna, the most amazing life coach, ever, that I must start cooking healthy items...for the sake of my health, blah,  blah, blah.  And Robin, pointed out that not every guest at our bed and breakfast will want fattening, gooey, sugary treats ALL of the time, EVERY day.  Sooooooooooooooooooooo, Donna and Robin, this is for you.  It's a start. 


Who cooks with applesauce????  I do!!! I do!!!  I'm not sure what it replaced, but I have to say...super tasty, moist and it satisfies my need for a dessert.  Slap on a Hello Kitty Edible Cake Decoration and not only is it super duper good, but so very cute.

So flattered you thought my advise worthwhile re: developing some treats using alternative or healthier ingredients to meet the needs of a wider range of future B&B guests ... as I mentioned, a big part of "getting away" for a day or a week includes food, and I and others seriously have to find out about menus first, then facilities second. Glad your first attempt produced such pleasing results for you; really, the more you experiment I'm certain you'll discover that if you don't tell folks they're eating healthy, they often will not know it by taste or appearance alone. The key of course is trying lots and lots of recipes to find really good ones; I plan on posting more recipes soon on my blog than I have been doing and perhaps you'll find some of them interesting too. I do agree Precious with your comment about not being sure what the applesauce replaced in this recipe; typically it is used in lieu of oils / butters + eggs but in this recipe in may really have been a flavor addition / enhancer. Regardless, glad you like those muffins!

  4. Very cute - Thanks for stopping by my blog - I'm so glad my muffins were an inspiration for you. Applesauce is a common technique used to lighten baked goods - the general rule is to replace 1/2 the fat in a recipe with an equal amount of applesauce. If you follow that guideline, you should be able to lighten some of your favorite full fat recipes.

  8. I could make these for my hubby! I made a chocolate cake for my mother in law's birthday last week and couldn't eat any of it. I can't eat sugar....at all! So I miss some of the yummy desserts! Love to see some healthy versions! Thanks!
